Pecan cookies with a twist of AirConsole

Is it Christmas time already?

It seems like just yesterday that we were huddled around the fire  drinking eggnog, eating delicious christmas cookies and challenging our loved ones to a game of AirConsole

With Christmas creeping just around the corner, we’ve been dipping our toes in some cookie recipes to assess the best one for you. After weeks of tirelessly baking and eating indulgent cookies (we didn’t mind the extra holiday weight to take into the new year) … we are coming to you this year with a special ‘Pecan Cookie a la AirConsole’ from ‘countryliving.com’! All you need is cookie cutters and in your favourite shapes, and a loved one to help you out. So turn up the heat on your oven and get ready to spread some holiday cheer.  

Ingredients:

Directions: 

  1. Add the pecans and 150 grams of sugar in a food processor and pulse them 10-12 times until finely ground. Add butter and vanilla and pulse 14-16 times until creamy, 14 to 16 times. Add flour, salt, and cinnamon and pulse for 15-20 seconds, until combined well. Roll the dough between two baking sheets to 0.5cm thickness. Chill for 30 minutes upto 2 days, until the dough is firm.

  2. Preheat the oven to 180°C. Line two baking sheets on the tray. 

  3. Using your preferred shape of cookie cutters, cut out cookies and place them on the baking sheets, spacing them each 4cm apart. Bake for 7-10 minutes, until they are lightly golden brown around the edges. Cool for 10 minutes. 

  4. Dust your cookies with the remaining 50 grams of sugar.

  5. Enjoy them while winning AirConsole games (this step is absolutely necessary to enjoy them to the fullest!)
